SWEET PEA SOUP image

Number Of Ingredients 8

4 T. (1/2 stick) butter (or Smart Balance)
1 1/2 c. chopped onions
1-2 T. sugar or to taste
7 c.(or 2 #) frozen sweet peas
3 c. chicken broth or vegetable broth
Salt & white pepper to taste
Chicken or vegetable bouillon for additional flavor intensity (if desired)
Sour cream or half&half for garnish or to taste

Steps:

  • Melt butter in a heavy saucepan. Add onions; cook over low heat for 15 minutes. Add peas and broth; simmer 20 minutes. Cool slightly. Puree in a blender, then strain to remove any pea skins. Return soup to saucepan; season with salt and pepper and any other desired seasonings. Serve immediately, dolloped with sour cream, or stir in half&half to enrich the consistency.
