Steps:
- Melt butter in a heavy saucepan. Add onions; cook over low heat for 15 minutes. Add peas and broth; simmer 20 minutes. Cool slightly. Puree in a blender, then strain to remove any pea skins. Return soup to saucepan; season with salt and pepper and any other desired seasonings. Serve immediately, dolloped with sour cream, or stir in half&half to enrich the consistency.
