Sunshine Pancakes image

A bright and citrusy flavor with a dash of spice. Familiar breakfast flavors in an unusual presentation.

Number Of Ingredients 14

2 1/2 cup(s) all purpose flour
1/2 teaspoon(s) baking powder
1 1/2 teaspoon(s) baking soda
1/2 teaspoon(s) sea salt
1 tablespoon(s) sugar
2 tablespoon(s) light brown sugar
2 large eggs
1/2 teaspoon(s) vanilla extract
1 1/2 cup(s) buttermilk
1/2 cup(s) heavy cream
2 teaspoon(s) butter,melted
1/4 cup(s) fresh squeezed orange juice
1 teaspoon(s) fresh orange zest
1/4 teaspoon(s) allspice, ground

Steps:

  • Preheat your griddle to 350 degrees.
  • Mix all wet ingredients and the orange zest. Blend thoroughly.
  • In a small bowl blend the dry ingredients. Add to the wet ingredients and whisk until just blended. Do not overwork, that will make the pancakes rubbery.
  • Pour batter onto hot griddle using a 1/4 measuring cup. Cook until bubbles rise to the top and start to burst, then turn over and cook until cakes rise and edges are dry.
