Steps:
- Prepare the apple sauce by peeling and dicing the apples, adding the water and brown sugar and cooking it 6-7 minutes in a covered bowl in the microwave. If you prefer sweeter cookies you can use more sugar or add honey/molasses. In the meantime combine the oatmeal, walnuts, flour, cinnamon and baking powder in a mixing bowl. Add 2 cups of the apple sauce and the vegetable oil and mix well. Make cookies by putting 1 teaspoon of the mixture on baking sheet, covered with parchment paper - leave about half an inch between cookies. Bake for 20 minutes at 170˚ C (325˚ F) and cool on rack.
