SUMMER SPINACH SALAD image

1/3 bag of fresh baby spinach leaves
1/3 cup green pepper cut into medium sized pieces
1/3 cup purple onion, sliced into slivers
1/2 cup sliced baby bella mushrooms
1/2 large tomatoe, cut into bite-sized pieces
Blue cheese dressing to taste.

Steps:

  • Buy the spinach that is already washed and clean. Tear (do not cut) into bite sized leaves. Just grab a handfull & rip) Buy baby bella mushrooms that are already cleaned & sliced. Add to spinach. Cut onions & green pepper and add to spinach. Cut tomatoes, wrap in a paper towel to absorb the excess juice for a few minutes, then add to spinach. Toss with blue cheese dressing & a bit of fresh ground pepper.
