Sugar Cream Pie image

I grew up close to Amish country in Geneva, Indiana. This recipe is one grandma used that one of the men doing carpentry for us got from his wife. Very easy and very sweet....lots of great Hoosier memories in this pie !

Number Of Ingredients 9

1 pkg 9" refrigerated pie crust, lightly baked
3/4 c granulated sugar
2 1/2 c half and half
1/8 tsp salt
1/4 c brown sugar
1/4 c corn starch
1/2 c butter, cut up
1 tsp vanilla
1/8 tsp cinnamon

Steps:

  • 1. Unroll pie crust and just lighty bake acording to package directions. Remove and let cool slightly.
  • 2. Adjust oven temperature to 325 degrees F.
  • 3. In a medium saucepan, combine granulated sugar, salt and the half-and-half.
  • 4. Bring to boiling, stirring occasionally. Meanwhile, in another saucepan, combine brown sugar and cornstarch.
  • 5. Gradually whisk in hot half-and-half mixture.
  • 6. Add butter. Over medium heat, cook mixture, whisking constantly, 5 minutes or until boiling and thickened. Simmer 1 minute.
  • 7. Remove from heat and stir in vanilla. Pour into prepared pie shell; sprinkle with cinnamon.
  • 8. Bake 20 minutes or until top of pie is golden.
  • 9. Place on wire rack; pie filling will be very loose but will thicken on cooling. Cool completely before slicing.
