Sugar Cookies with Lemon Balm Tincture image

These lemon balm tincture cookies are deliciously refreshing! You can substitute lemon flavoring for the tincture but if you grow your own lemon balm and make your own tincture like I do, the tincture is wonderful.

1 stick unsalted butter, softened
3/4 c sugar
1 egg
1 tsp lemon balm tincture
1 1/2 c flour
1/2 tsp baking soda
1/4 tsp salt
1 lemon, zest and juice
1 c powdered sugar

Steps:

  • 1. Preheat oven to 350 degrees. Using the paddle in a stand mixer, cream butter and sugar. Add egg and mix well. Add lemon balm tincture and zest of one lemon (1-2 tablespoons). Mix until combined.
  • 2. Sift flour, salt, and baking soda. Add dry ingredients to wet ingredients 1/2 a cup at a time, mixing until incorporated before adding more dry ingredients.
  • 3. Drop spoonfuls of cookie dough (I use a tablespoon cookie scoop) onto a parchment lined cookie sheet. Bake for 12 minutes or until the edges just begin to brown slightly.
  • 4. Remove cookies from oven, cool on cookie sheet 3-5 minutes then transfer to a wire rack to cool completely.
  • 5. Mix together 1 cup of powdered sugar and about 2 tablespoons of fresh lemon juice. Transfer the icing to a cookie icing bottle and decorate cookies using a zigzag lined pattern as seen in the picture.
