Strawberry Rhubarb Crisp image

This is my hubby's favorite dessert! It works great with fresh, frozen or a combination of fruit!

Number Of Ingredients 11

CRUST
2 c flour
1 1/2 c oats
1 1/4 c brown sugar
1 c butter, softened
FILLING
2 c chopped rhubarb (fresh or frozen)
2 c sliced strawberries (fresh or frozen)
1 1/3 c sugar
2 1/2 Tbsp corn starch
1 1/2 c water

Steps:

  • 1. Combine crust ingredients, press half of mixture into a 9x13'' greased pan.
  • 2. Top crust with berries and rhubarb.
  • 3. Stir together water, sugar and corn starch, heat until thickened, pour over fruit.
  • 4. Sprinkle other half of crumbs on top.
  • 5. Bake @ 350 for 45 mins.
