Steps:
- Mix chicken with egg white and then add cornstarch mixed with salt Heat wok. Add walnuts and stir fry for 3 minutes. Remove. heat oil and stir fry ginger, garlic, salt and pepper. Add chicken and stir fry 2-3 minutes.Add sherry, sugar, soy sauce and continue cooking for 3 minutes. Push off to one side of wok and pour in cornstarch mixture. Cook until it thickens and clears and stir in chicken and walnuts.
