Steps:
- cut boneless thighs into 1 inch pieces, set aside and sprinkle cajun spices over.
- chop onion and mushroom into pieces, set aside
- cut tomatoes, black olives and feta in a large dice add capers set aside
- chop bacon into 1/2 inch squares
- chop garlic into mince
- spiralize the zucchini and yellow squash set aside.
- melt the butter in a pan and saute the onion and mushrooms remove and set aside
- render the bacon until crisp set aside leave fat in pan add chicken and garlic to the pan cook until done
- Remove the chicken when done and add the the zucchini, yellow squash, tomatoes, black olives, capers and feta to the pan and heat and serve.
- serve when heated
