Spinach Cream Pasta image

I made this up out of desperation! I had run out of spaghetti souce, and the only thing I had available in my shelve was a bottle of Spinach Dip! It turned out to be one of the best and easiest things I ever came ou with! Enjoy often!

1 box whole wheat elbow macarroni pasta
1 bottle tostitos spinach dip
1 medium roasted chicken boned and shreded
1 pkg any frozen vegetable of your choice
water to cover pasta plus
salt to taste

Steps:

  • 1. Get all the chicken off the bones and shred to the desired size pieces. Set aside, and open the bottle of Tostitos Spinach Dip. Get a soft silicone spatula ready.
  • 2. Put pasta in pot and cover with water so it is about 2 inches over the surface of the pasta. Add salt to taste, about 2 teaspoons or so. I use Celtic salt which is healthy for you.Do not cover the pot, you will not be draining the water out, it will absorb into the pasta as it cooks. If you need to add water if it becomes dry before it softens. Add boiling water, not cold if needed. Stir constantly.
  • 3. When your pasta is about done, add the frozen vegetables, and let soften for a few minutes. Turn off the fire and add the chicken, and the Tostitos Spinach Dip! Enjoy hot or cold!
  • 4. This makes a wonderful cold dish for the summer. I serve it with fresh greens salad, or cut fresh cucumbers, carrots and radishes. I LOVE THIS!
