SPICY CORN MUFFINS image

Number Of Ingredients 10

7 oz. sifted flour
2 1/2 oz. cornmeal
1 T. baking powder
pinch salt
4 T. chopped coriander
2 jalapeno peppers, seeded & finely chopped
1 oz. light brown sugar
6 T. water
3 lg. eggs
2 1/2 oz. sunflower oil

Steps:

  • Preheat oven to 350° F. Place paper cases in 12-hold patty tin. Mix flour, cornmeal, baking powder & salt (sift twice). into large bowl. Stir in coriander, chilies & sugar. Mix water, eggs & oil in jug. Add liquid to dry ingredients, using round-tipped knife until well combined. Fill cups & bake 15-20 mins until knife comes out clean. Can also use greased cake tin.
