Spicy BBQ Pulled Pork Stuffed Pepper Mini's image

What a great appetizer for your next gathering! I am sure your friends will love this one ... whether during tailgate season or just a casual spring evening on the back porch. This recipe is a keeper!

Number Of Ingredients 12

1/2 c outta the park spicy bbq sauce
1/3 lb smoked pork, chopped
6-8 oz mexican shredded cheese
1/2 small onion, grated
2 Tbsp uncle gary's gourmet peppers, chopped
2 medium garlic cloves, grated
2 Tbsp cilantro, chopped
zest of 1 lime
1 tsp cumin
1/2 tsp chipotle chili powder
1/2 tsp habanero sea salt
12 mini bell peppers, cut in half

Steps:

  • 1. Preheat oven to 350 degrees. Combine ingredients 1-11 in a mixung bowl.
  • 2. Stuff pepper halves with mixture. Place on cookie sheet and bake for 20-25 minutes until peppers are soft and cheese has melted.
