Spiced Roasted Beets image

Via our CSA box notes-original recipe source unknown. Will also work substituting golden beets. I added the shallots. Easy!

Number Of Ingredients 8

1 bunch beets, tops trimmed, scrubbed well and either cut in half or quartered (depending on their size)
1 large shallot, peeled and cut into crescents
2 Tbsp coconut oil
1/2 tsp ground cumin
1/2 tsp spanish smoked paprika
pinch chili powder (we tried aleppo powder)
1/4 tsp salt
1/4 tsp cracked black pepepr

Steps:

  • 1. Preheat oven to 400 degrees. Note: I don't peel the beets but you can if you prefer.
  • 2. Toss beets and shallot with coconut oil and lay flat on sheet pan. Toss with the remaining ingredients. Roast for 40 minutes, or until tender.
  • 3. Sprinkle with some additional salt and pepper, if desired. Serve warm.
