Spiced Keto Banana Bread image

A combination of olive oil, coconut and almond flour yields a moist, sliceable loaf, flavored with warm spices and speckled with walnuts. If you can keep yourself from consuming it all at once, this bread can last for 2-3 days without compromising flavor or texture.

1/3 cup olive oil, plus additional for greasing pan
2 cups almond flour
1/3 cup coconut flour
1 teaspoon baking powder
1 teaspoon kosher salt
2 teaspoons cinnamon
3/4 teaspoon cardamom
1/2 teaspoon nutmeg
1/4 teaspoon clove
3 very ripe bananas
3 large eggs, at room temperature
2 teaspoons vanilla extract
2 tablespoons honey (or replace with desired sweetener)
1 cup walnuts, lightly chopped
1 cup coconut flakes

Steps:

  • Preheat oven to 350 degrees. Lightly grease a 9" x 5" loaf pan with olive oil. Line with parchment, leaving a 2-inch overhang on all sides.
  • In a medium bowl, whisk to combine almond flour, coconut flour, baking powder, salt, cinnamon, cardamom, nutmeg, and cloves.
  • Place bananas in a large bowl. Mash until smooth with a fork or potato masher. Add olive oil, eggs, vanilla, and honey or other sweetener and mix to combine. Add dry ingredients and stir until incorporated. Add walnuts and coconut flakes and fold to combine. Transfer to prepared loaf pan and smooth top.
  • Bake until a toothpick comes out clean and bread is lightly golden, about 40 minutes. Lift parchment to remove from pan and let cool on a rack. Slice and serve.
