Spiced Banana Bread image

Adapted this from another banana bread recipe I found here (#1387). Added a lot of the spices from my pumpkin pie that I like and added chocolate chips for the kids.

1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ginger, ground
1/2 teaspoon allspice, ground
1/2 teaspoon nutmeg, grated
1/2 teaspoon cardamom
1 teaspoon cinnamon
2 teaspoons vanilla extract
1 tablespoon spiced rum
1 teaspoon coffee, ground
1 teaspoon lemon zest
1/2 cup butter
3/4 cup sugar
2 large eggs
1 apple, peeled, cored, and diced
4 -5 bananas, slightly mashed (about 2 1/2 cups)
1 cup semi-sweet chocolate chips

Steps:

  • preheat oven to 375°F.
  • Grease 9 x 5 inch loaf pan.
  • mix flour, baking powder, baking soda,
  • salt, spices, coffee and lemon zest together and set aside.
  • beat butter in large mixing bowl until soft and creamy.
  • beat in sugar
  • add eggs, vanilla and rum and beat until blended.
  • add flour mix and beat until well blended.
  • fold in mashed bananas, apple, and chocolate chips.
  • pour into prepared pan.
  • bake in center of oven for 1 hour 15 minutes or until toothpick inserted in center comes out clean.
  • cool in pan 10 minutes.
  • invert from pan and cool completely on rack.
