Dutch Spice Cake image

This traditional Dutch Spice Cake (called 'Ontbijtkoek', in the Netherlands) has a soft, spongy texture with a delicious spicy flavor from the cinnamon, ginger, cloves, nutmeg and other warm spices. 1 2/3 cup all-purpose flour
1 tsp baking powder
1 tsp salt
2 tsp ground cinnamon
3/4 tsp ground cloves
1 tsp ginger
1/2 tsp ground nutmeg
1/4 tsp allspice or mace
1 cup light brown sugar
1 large egg, beaten
3/4 cup milk
7 Tbsp butter, melted
3/4 cup chopped walnuts
OPTIONAL (TO SERVE)
whipped cream - to serve
honey (or golden syrup) - to serve

Steps:

  • 1. Preheat oven to 325°F (160°C). Grease a 8x12x2-inch baking dish. Line the greased pan with parchment baking paper, allowing 2 inches overhang on both ends.
  • 2. Sift flour, baking powder, salt, cinnamon, cloves, ginger, nutmeg and allspice together into a large bowl. Stir in sugar. Make a well in the center, and add the egg, milk and butter. Using a wooden spoon, stir until batter is smooth. Spoon into prepared baking pan, and smooth the top. Evenly distribute walnuts on top.
  • 3. Bake for 27 to 32 minutes or until a toothpick inserted in center comes out clean. Cool in pan for 5 minutes. Then run a butter knife along the edges so cake releases easily. Grab edges of the parchment on both sides of cake pan, and gently lift cake from pan. Remove parchment paper and place cake on cooling rack (top facing up) to cool completely. Cut into serving slices (standard is 6x4 rows), and serve slices with dollops of cream and honey (or golden syrup) drizzled on top.
