Special Brownies image

Yield 9 - 10 dozen

Number Of Ingredients 12

4 ounces unsweetened baking chocolate, divided
1/2 cup plus 2 tablespoons butter, divided
1 cup sugar
2 eggs, beaten
1/2 cup self-rising flour
1/2 cup chopped pecans

Buttercream Frosting:
1/4 cup butter, softened
2 cups confectioners' sugar
2 tablespoons milk
1/2 teaspoon vanilla extract

Steps:

  • Combine 2 ounces unsweetened chocolate and 1/2 cup butter in a 4-cup microwave-safe bowl. Microwave on High until melted. Add sugar, eggs, and flour, and mix well. Stir in pecans. Spoon into a greased 9x13-inch glass baking dish. Bake at 350° for 20 minutes or until brownies pull away from side of dish. Let stand until cool. Spread Buttercream Frosting over the top. Chill in refrigerator. Melt remaining 2 ounces unsweetened chocolate and 2 tablespoons butter in a saucepan, stirring to mix well. Pour over Buttercream Frosting, tilting the pan so the chocolate mixture will spread evenly. Let stand until cool. Cut into bite-size pieces. Buttercream Frosting: Beat butter in mixer bowl until fluffy. Add confectioners' sugar, milk, and vanilla, and beat until smooth. Fun Fact: The Cape Hatteras Lighthouse, built in 1870 in North Carolina, is the tallest brick lighthouse (208 feet) in North America. The lighthouse was relocated in 1999, and moved away from the ocean to protect against beach erosion. Now located 1,600 feet from the shore, as it did at the time it was built, Cape Hatteras is the largest lighthouse ever to be moved due to erosion problems.
