SPAGHETTI SQUASH AND GOAT CHEESE image

1 spaghetti squash
1 tablespoon olive oil
1 tablespoon butter
1/2 cup chopped pecans
4 cloves garlic, finely chopped
handful chopped parsley
salt and pepper
1/2 cup cream
2 tablespoons parmesan cheese
4 oz goat cheese
handful chopped basil

Steps:

  • Halve and cook the spaghetti squash in boiling water for 15 minutes or until tender. Drain and pull out the strands with a fork to make spaghetti. Melt the butter and oil in frypan and saute the garlic, pecans, parsley and pepper. Remove. Mix together the cream, parmesan and goat cheese. Toss the spaghetti squash with the nut and cheese mixtures, basil, salt and pepper. Serve hot.
