SOUTHWEST BRUNCH CASSEROLE image

1 (16 oz) package mild
ground pork sausage
12 large eggs, lightly beat
Chile Cheese sauce
2 cups self rising flour
1/3 cup veg oil
1/3 cup evaporated milk
1 large egg, lightly beat
1/2 tsp chli powder
1-1/2 cups (6oz) cheddar or
monteray jack cheese
2 Tbsp chopped fresh
cilantro or parsley

Steps:

  • Cook sausage and onion. Reduce heat to medium and add eggs; cook without stirring until eggs set on bottom. Gently stir to slightly break up eggs. cook, stirring occasionally until eggs are thickened but still moist (DO NOT OVERSTIR) Remove from heat and stir in Chile-cheese sauce. spoon into a lightly greased baking dish and set aside Stir together flour and next four ingredients until dough forms. Turn dough out onto a lightly floured surface and knead 3-4 times. Roll dough into 12 in square and sprinkle evenly with shredded cheese and cilantro. Roll up, jelly loaf fashion and cut into 12 slices. Place dough slices over egg mixture slicing evenly. Bake at 400F for 25 to 30 mins or until golden. Chile_Cheese sauce 2 tbsp butter 2-1/2 tbsp all purpose flour 2 cups milk 1 cup shredded cheddar 1 can green chiles 1/2 tsp salt 1/4 tsp pepper
