SOUTHERN PORK TENDERLOIN WITH CHOW-CHOW image

For the pork:
2 T. chili powder
1 t. each kosher salt, black pepper and garlic powder
1/2 t. dried thyme
1/4 t. cayenne pepper
2 T. vegetable oil
1 pork tenderloin (about 1.5 lbs.)
For the chow-chow sauce:
1/2 c. prepared yellow mustard
1/4 c. chopped yellow onion
3 T. honey
2 T. sweet pickle relish
2 T. cider venegar
2 t. Worcestershire sauce
Salt to taste

Steps:

  • Preheat grill to medium-high. Combine chili powder salt, pepper, garlic powder, thyme, and cayenne in a small bowl; stir in oil. Rub mixture over tenderloin or put all ingredients in sealed plastic bag to coat tenderloin. Grill pork covered 3 minutes. Rotate pork and grill 3 minutes more. Rotate pork every 3 minutes until an internal temperature of 150 registers on an instant-read thermometer, about 15 minutes total. Remove pork from grill, tent with foil, and let meat rest 5 minutes. Prepare sauce while pork grills. Simmer mustard, onion, honey, relish, vinegar, Worcestershire, and salt for the chow-chow in a small saucepan over medium-low heat for 3-4 minutes. to serve, cut pork into 1/2 inch thick slices; serve with sauce.
