SOUR CREAM SOUP image

Yield 8 bowls

Number Of Ingredients 9

1 c pearl barley
8 c water
1 pt sour cream (or yogurt)or use 1/2 pt sour cream + 1/2 pt light sour cream
2-3 T butter
1 sm onion, diced
(optional, diced pancetta)
2 t salt (to taste)
white pepper (to taste)
fresh dill

Steps:

  • Saute onion (and pancetta if using) in butter til transparent. Add barlet and stir for 1-2 minutes and add water. Bring to boil then simmer til barley soft, about 30 min. Cool slightly then add sour cream, salt, pepper and dill. May also then add spinach or swiss chard.
