Steps:
- beat sugar and butter until soft and creamy.
- Add mixed fruit
- mix bicarbonate with cider quickly add to stewed apple
- mix into the butter and fruit mixture
- sieve in plain flour and mixed spice
- Put into 7in tin, bake for 1 half hours at gas mk 3 , 170c, 325f until firm
