Smothered Pork Chops image

One of the Classic Pork Chop dishes in Cajun/Creole cooking

Number Of Ingredients 11

4 pork chops 3/4 inch thick, bone-in
2/3 c flour
1 Tbsp garlic powder
1 Tbsp onion powder
1/2 tsp salt
1/4 tsp cayenne pepper
1/4 tsp pepper
1/4 c olive oil
1 c chicken broth
1/2 c buttermilk
fresh flat leaf parsley chopped, for garnish

Steps:

  • 1. Pat the pork chops dry with paper towels Mix all the dry ingredients in a shallow dish.
  • 2. Coat the pork chops with the flour mixture.
  • 3. Heat oil over medium high heat in large saute pan.
  • 4. Add pork chops to hot oil and fry 3 minutes on each side until golden brown. Remove from pan.
  • 5. Add 2 T seasoned flour to pan. Mix up flour and fat. Mix in chicken broth and let it reduce and thicken for 5 minutes.
  • 6. Add buttermilk to pan. Return pork chops to pan covering with sauce.
  • 7. Simmer for 5 minutes or until pork is cooked through.
  • 8. Season with salt and pepper. Serve pork chop with gravy and chopped parsley.
