Smoky Tangy Collards image

1/4- cup olive oil
8 ounces Smoked bacon, chopped
1 Large onion, finely chopped
1 head garlic, cloves, separated, thinly sliced
1 teaspoon Red pepper flakes
1 teaspoon black pepper, freshly ground
3 cups chicken stock
1 cup apple cider vinegar
1/3 cup dark brown sugar
1/3 cup Texas Pete hot sauce
8 cups Collards, 2 medium bunches, stems trimmed, leaves chopped

Steps:

  • Cook oil and bacon until bacon is browned around the edges, 5-8 min. Add onion and garlic, cook until garlic is golden, about 5 minutes. Stir in red pepper flakes, black pepper, stock, vinegar, brown sugar and hot sauce. Then mix in collards and reduce heat to low. Bring to a simmer: cover and cook, stirring occasionally, until greens are tender but still have some chew, 70 min).
