Slow-Cooker Pulled Pork image

I got the original recipe for this from the Taste of Home Comfort Food Diet Cookbook...after making it once, I made some changes to the ingredients & measurements; we like the 'adjusted' recipe better!. You can serve this either as sandwiches topped with coleslaw, or just on a plate with sides of mashed potatoes and coleslaw. Either way, it's great! Hubby gave it his stamp of approval!

Number Of Ingredients 10

1 - boneless pork loin roast (2-3 lb)
1 medium onion, thinly sliced
1 cup(s) beer (or nonalcoholic beer)
1 cup(s) heinz chili sauce
1 tablespoon(s) light brown sugar
2 tablespoon(s) molasses
2 tablespoon(s) prepared horseradish (not the sauce)
8 - sandwich rolls (kaiser rolls are good)
- coleslaw (optional)
- mashed potatoes (optional)

Steps:

  • Place pork roast in crockpot; slice onions thin with a mandoline and place over top of meat.
  • Mix the beer, chili sauce, brown sugar, molasses & horseradish together in a bowl, stir to mix well. Pour over meat & onions.
  • Cover and cook on "Low" for 6 to 6-1/2 hours or until meat is tender. Carefully remove roast and let sit until cool enough to handle. Remove any fat from roast, then shred with fingers or use two forks.
  • Place meat back into crockpot and stir well to mix thoroughly. Heat awhile longer until warmed through.
  • Spoon onto buns and top with some coleslaw. OR just meat on plate with a little sauce, accompanied with mashed potatoes and coleslaw.
  • NOTE: Cooked all night in the crockpot...as I was removing meat to cool & shred, there was a popping sound & sparks flew from around control button on pot...so had to finish in one of my stainless pots...sad, my Dad bought that crockpot for me in 1974 for Christmas...it served us well, but now it's gone, as is Dad...:( love & miss you Daddy
