Slow Cooker Loaded Potato Soup image

I love this recipe it is so yummy

Number Of Ingredients 9

4 lb potatoes, russet, yukon gold, or red skin
1/2 c onion, chopped
2 clove garlic, minced
2 stalk(s) celery, finely diced
2 can(s) (14 ounces) chicken broth
2 tsp salt
1/2 tsp pepper
2 c half and half
garnish with cheddar cheese, cooked and crumbled bacon, and sliced green onions

Steps:

  • 1. Layer cubed potatoes in a lightly greased (I used non stick spray) 5 quart slow cooker
  • 2. Top with chopped onion, garlic, and celery
  • 3. Add chicken broth, salt and pepper. Broth will not completely cover potatoes. Cover and cook on low setting for 8 hours or until potatoes are tender
  • 4. Mash mixture with potato masher ( I don't mash it completely because I still want some visible potato chunks in there.)
  • 5. Stir in half and half. Cover and cook on high setting for 20 minutes or until mixture is thoroughly heated. Ladle into bowls and garnish with favorite toppings.
  • 6. COOKS NOTES: If you really want to cut down on some of the prep time, try using a bag of Southern Style frozen hash browns. Use the cubed variation, Ore-Ida has them
