I always liked the flavors in my baked ham loaf, so I decided to "tweak" that recipe a little and then form the mixture into patties and make on the grill. The result is this delicious "alternative" burger served on a whole wheat roll and honey mustard dressing. This is truly a summertime favorite!

Steps:
- 1. Place all "Hammie" ingredients in a large bowl. Mix with hands until well combined. Mixture should hold together when patties are formed. (NOTE: if too dry, add more pineapple juice, if too wet, add more graham cracker crumbs)
- 2. Make 6 baseball size patties. Place a "dimple" in middle of each pattie so they remain flat when grilled. Refrigerate for 1 hour.
- 3. Prepare grill. Coat grids with vegetable oil. Place patties on grill and grill for 5-6 minutes, turn and grill for another 5-6 minutes or until instant read thermometer reads 160 degrees F.
- 4. During the last minute, place a slice of Swiss cheese on top of each pattie, close lid and cook until cheese melts, about 1-2 minutes.
- 5. Assemble hammies: Place roll bottoms on serving platter. Lightly drizzle with honey mustard dressing. Evenly divide arugula between rolls and spread evenly. Top each with a hammie and tomato slice. Drizzle the underside of top roll with more honey mustard dressing and place on top of all.
- 6. Serve with additional honey mustard dressing.
