Skinny Chocolate Oatmeal image

A tasty, low-calorie dessert for chocolate lovers and oatmeal lovers alike! This can be made milk-free by using all water instead of part water and part milk. Top with chopped walnuts and dark chocolate chips, if desired.

1 ¼ cups water
½ cup skim milk
1 teaspoon vanilla extract
1 cup old-fashioned rolled oats
1 tablespoon unsweetened cocoa powder
1 tablespoon white sugar
1 teaspoon ground cinnamon
1 tablespoon shredded coconut

Steps:

  • Combine water, milk, and vanilla extract in a small pot over medium-high heat; bring to a boil. Stir in oatmeal. Reduce heat to medium and cook, stirring frequently, for about 5 minutes.
  • Stir in cocoa powder, sugar, cinnamon, and coconut. Cook, stirring constantly, until oatmeal thickens and is soft, about 5 more minutes. Serve warm.
