SIX WEEK BRAN MUFFIN MIX image

Number Of Ingredients 9

5 c whole wheat flour
4 1/2 c bran flakes
2 1/2 c white sugar
5 t backing soda
2t salt
1 l buttermilk or 4 c mild soured with lemon juice/vinegar or 4 c plain yogurt or mixture
4 eggs
1 c canola oil
4 eggs

Steps:

  • Mix wet and dry then combine Refrigerate for up to 6 weeks Heat oven to 400 Spray oil in muffin tray or line with paper liners, fill unneeded cups with water Do not mix batter- spoon from top into each cup Add shredded carrot or 6 blueberries or chocolate chips into each and press down into batter Bake 20 min Remove with knife and eat while hot with butter
