Simply Pork Chops & Gravy image

Sometimes I just like my Pork Chops simple with a nice smooth and savory gravy. While I have only used salt, pepper and garlic salt; you can experiment with any of your favorite seasonings. Number Of Ingredients 6

2 - 4 medium pork chops, i prefer new york style
salt, to taste
pepper to taste
garlic salt, to taste
1/4 c canola oil, more if needed
1/4 c flour

Steps:

  • 1. Season pork chops with salt, pepper and garlic salt to taste.
  • 2. Add canola oil to skillet and heat on medium high heat.
  • 3. Add pork chops to heated oil seasoned side down and sear until browned.
  • 4. Season other side of chops.
  • 5. Turn chops over and sear until browned but not cooked through. Remove from skillet when both sides are browned and set aside.
  • 6. Add more oil if needed to make gravy and then add flour to oil.
  • 7. Stir oil and flour to make a roux.
  • 8. Cook until roux becomes golden brown in color. Be sure to scrape bottom of skillet to loosen dredgings.
  • 9. Add water to roux a little at a time.
  • 10. Add enough water to make a gravy consistency. Season with salt, pepper and garlic salt to taste.
  • 11. Bring to boil and cook until gravy has thickened.
  • 12. Return pork chops to skillet. Simmer until done 10 to 15 minutes. Add additional water to gravy if necessary and check that it is seasoned properly.
  • 13. Serve with rice, mashed potatoes or quinoa.
