Steps:
- 1. Season pork chops with salt, pepper and garlic salt to taste.
- 2. Add canola oil to skillet and heat on medium high heat.
- 3. Add pork chops to heated oil seasoned side down and sear until browned.
- 4. Season other side of chops.
- 5. Turn chops over and sear until browned but not cooked through. Remove from skillet when both sides are browned and set aside.
- 6. Add more oil if needed to make gravy and then add flour to oil.
- 7. Stir oil and flour to make a roux.
- 8. Cook until roux becomes golden brown in color. Be sure to scrape bottom of skillet to loosen dredgings.
- 9. Add water to roux a little at a time.
- 10. Add enough water to make a gravy consistency. Season with salt, pepper and garlic salt to taste.
- 11. Bring to boil and cook until gravy has thickened.
- 12. Return pork chops to skillet. Simmer until done 10 to 15 minutes. Add additional water to gravy if necessary and check that it is seasoned properly.
- 13. Serve with rice, mashed potatoes or quinoa.
