Shrimp À La Criolla Recipe image

STEW
4 medium plum tomatoes
chopped 1 large red bell pepper
chopped 1 (8-ounce) can tomato sauce
3 garlic cloves crushed
¼ cup chopped fresh cilantro
½ teaspoon ground cumin
½ teaspoon kosher salt
2 bay leaves
SHRIMP
1 ½ pounds peeled and deveined jumbo shrimp
1 teaspoon olive oil
2 garlic cloves, crushed
½ teaspoon ground cumin
½ teaspoon kosher salt
⅛ teaspoon crushed red pepper flakes
¼ cup chopped green olives, plus 2 tablespoons brine
2 tablespoons chopped fresh cilantro, for garnish

Steps:

  • For the stew: In a slow cooker, combine the tomatoes, bell pepper, tomato sauce, ½ cup water, the garlic, cilantro, cumin, salt, and bay leaves and stir. Cover and cook on low for 6 to 8 hours. For the shrimp: In a medium bowl, combine the shrimp, olive oil, garlic, cumin, salt, and pepper flakes. Refrigerate until the stew has finished cooking. When the stew is done, stir in the shrimp, olives, and brine. Cover and cook until the shrimp is opaque, 20 to 30 minutes on high. Discard the bay leaves. Serve immediately, garnished with the cilantro.
