SHRIMP WITH ISRAELI COUSCOUS AND FETA image

Number Of Ingredients 12

8 ounces Israeli Couscous
6 tablespoons olive oil
1 cup crumbled feta cheese
1/4 cup freshly grated Parmesan cheese
2 tablespoons plus 1/4 cup chopped chives
Zest of 1 and 1/2 lemons
1 pound cooked medium shrimp, peeled, deveined (Trader Joe's)
2 garlic cloves, chopped
1 6 oz can tomato juice
1/2 cup dry white wine
2 teaspoons chopped chives
1/2 teaspoon dried crushed red pepper

Steps:

  • Cook couscous according to package directions (but substitute chicken broth for water). Add 2 tablespoons olive oil, 1/4 cup feta cheese, Parmesan cheese, and 2 tablespoons chives; stir to blend. Heat 2 tablespoons oil in large skillet over medium-high heat. Add garlic and sauté over medium-high heat 30 seconds. Add tomato juice; cook 1 minute. Stir in wine,and crushed red pepper. Simmer uncovered until reduced to thick sauce consistency, stirring occasionally, about 2 minutes. Season sauce to taste with salt and pepper. Throw cooked shrimp into sauce. spoon over shrimp. Sprinkle with remaining chives. some lemon zest and 3/4 cup feta cheese and serve.
