SHRIMP TAPAS image

Yield Makes 8 servings.

Number Of Ingredients 7

1 lb. fresh, raw shrimp, peeled and deveined
1 medium cucumber, peeled and diced
1 small purple onion, peeled and diced
2 cups freshly squeezed lime juice
4 whole dried red chilies
pinch of salt
1 Bag yellow corn chips (I prefer the round shapes)

Steps:

  • Diced the shrimp into small pieces. Place in a large glass serving dish. Add the cucumber and onion. Allow to rest while preparing the dressing. Place the lime juice, salt and chilies in a blender. Blend on high for 1 minute, or until there are no large, visible pieces of chilies remaining. Pour the dressing over the shrimp. Toss thoroughly. Allow to sit, chilled if desired, for 20 minutes before serving. To serve, place 1 tablespoon of the shrimp on a cornchip round and put it on a platter. I like to decorate each piece with a little sprig of fresh cilantro.
