SHRIMP POSOLE image

1 tablespoon olive oil
1 cup chopped onion
3 celery stalks, chopped (about 1 cup)
3 carrots, chopped (about 1 cup)
2 minced cloves garlic
1 teaspoon oregano
1 teaspoon ground cumin
1/2 teaspoon chili powder
2 (14.5-ounce) cans lower-sodium chicken broth
1 (15.5-ounce) can white hominy, drained and rinsed
1 (14.5-ounce) can diced tomatoes, drained
1 pound peeled shrimp

Steps:

  • 1. Heat the oil in a soup pot over medium high. Add the onion, celery, carrot, garlic, oregano, cumin and chili powder and cook, stirring occasionally, until vegetables are softened, about 5 minutes. 2. Add the broth, hominy and tomato and bring to a boil; immediately reduce heat and simmer 10 minutes to allow flavors to develop. Stir in shrimp and simmer until shrimp is just cooked through, about 4 minutes. Serve right away
