Cornbread Salad image

Everywhere I take this recipe I have to share it.. Just make some copies of it before a get together because I guarantee you will be bombarded with how did you make this...

Number Of Ingredients 12

1 pan of cornbread. you can use package mix or make your own
1 pkg hidden valley ranch dressing mix
1 1/2 c sour cream(reg r fat free)
1 1/2 c mayonnaise
2 can(s) 15 0z pinto beans (drained)
2 can(s) 15 oz green sweet peas
2 can(s) 11 oz sweet yellow corn
2 tomatoes chopped or you can used a can of diced tomatoes (drained)
2 c shredded cheddar cheese
1 c chopped green onion
half jar(s) hormel real bacon bits
1 green bell pepper chopped

Steps:

  • 1. Make cornbread according to recipe. After cornbread is cool crumble in a large bowl or baking dish. Mix ranch dressing with sour cream and mayo. Sit aside. Chop tomatoes, green onion and green pepper. The recipe I have says to start with a layer of cornbread then add beans, a layer of corn and so on but I do not layer mine I just go ahead and mix it all up. I start with the cornbread,add my beans, corn, peas, onion, pepper,cheese,bacon, and tomatoes and then I add the ranch dressing mix stir it all up and let sit for a couple of hours in fridge before eating. Taste better after it sits a while. Enjoy!
  • 2. I have also just used 1 can of beans, peas and corn and it makes plenty...
