SHRIMP ON A STICK image

Number Of Ingredients 7

48 fresh shrimp, peeled and deveined
16 fresh mushrooms
24 one-inch square pieces of green pepper
24 black olives
16 half inch slices fresh zucchini
1 cup Italian dressing
Cooked rice for 6 servings

Steps:

  • Put Italian dressing in a bowl. Add the shrimp, mushrooms, green pepper, olives and zucchini. Mix gently together and cover. Refrigerate and marinate for 1 hour. On 4 skewers, alternate shrimp, mushrooms, pepper olives and zucchini. Save the dressing. Cook rice according to directions on package. Heat grill. Place skewers on grill and cook for approximately 10 minutes, turning and brushing them 2 or 3 times with the reserved dressing. Serve over the top of a bed of cooked rice.
