SHOEMAKER CHICKEN (POLLO SCARPARIELLA) image

1-1/4 cup olive oil
3 small chickens (1-1/2 to 1-3/4 lbs each), cut into serving pieces with backbone discarded
1 tsp chopped garlic
1/2 tsp chopped parsley
1-1/2 tsp rosemary
2/3 cup dry white wine

Steps:

  • Heat oil in skillet until very hot. Season chicken with salt and pepper and fry over high heat until a golden brown. Add garlic and cook until golde, being careful not to let it burn. Add parsley and rosemary. Remove pan from heat, mix in wine. Put back on heat and cook over low heat until wine evaporates (about 10 mins). Pour pan juices over chicken.
