SCALLOPS W/WHITE BEANS & BACON image

Number Of Ingredients 8

4 strips, crisp bacon, diced
1/2 red onion, minced
1 clove garlic
2 cans, cooked white beans
4 cups baby spinach
1lb of large sea scallops
butter
juice of a lemon

Steps:

  • Over medium heat, cook the bacon until crisp. Retain half of pork fat, add onion and garlic and saute. Add the white beans and spinach, cook until beans are warm and spinach has wilted. Keep warm. Heat a cast iron skillet. Blot scallops dry with a towel. Season with salt and pepper on both sides. Add butter to skillet. Upon melting and scallops and sear on each side. 2-3 minutes. Before serving, add lemon juice to bean mixture.
