6 ounce(s) pineapple juice
3/4 pound(s) flank steak
2 - bell peppers, sliced
1 large red onion, sliced
1 cup(s) monterey jack cheese, shredded
4 - flour tortillas

Steps:

  • Pour pineapple juice over flank steak in non-metallic dish.
  • Cover; marinate 30 minutes in refrigerator.
  • Discard marinade.
  • Grill or broil steak with peppers, onion for 15 minutes for medium rare or until vegetables are tender.
  • Divide steak and vegetables and cheese among 4 (8 inch) flour tortilla.
  • Roll up.
