Steps:
- 1. Heat oil in pan over med-high heat. Add zucchini and oregano. Stir occasionally until crisp-tender (4-6 minutes).
- 2. Remove from heat. Stir in parsley, salt, and pepper.
- 3. Transfer to plates and sprinkle with cheese.
