SAUTEED SHRIMP SALAD image

Number Of Ingredients 13

24 shrimp (1 1/2 lbs)
2 bunches of spinach (12 oz)
1 tbl olive oil
3 cloves garlic, chopped
1 tbl chopped fresh ginger
1 red Spanish onion, julienned
1 red pepper, julienned
1 yellow pepper, julienned
2 oz Shitake mushrooms, sliced
1/2 cup orange juice
1/4 cup rice vinegar
1 tsp Chili powder
2 tbl Soy sauce

Steps:

  • Peel and devein shrimpt. Wash, trum and dry spinach. Put in large bowl. Set shrimp and spinach aside. In saute pan or wok heat oil until smoking. Saute shrimp until they begin to turn pink. Add garlic and ginger and saute 1 minutes. Add onion, yellow and red pepper, muchroom, and saute 2 minutes. Add OJ, vinegar, Chili, soy and mix. Heat to boil and season with pepper. P Pour mixture over spinach and toss. Serve warm.
