Sausage-Stuffed Loaf image

I don't remember where I got this recipe, but it is a real keeper. It is easy, but looks complicated. My family loved it and the best thing is that you just serve a simple green salad with it and you have a complete meal. You can substitute ground beef for the sausage if you don't want the spicy taste of the sausage.

1 lb ground sausage
1/2 cup chopped onion
1/4 cup chopped bell pepper
1 medium tomatoes, chopped
1 can chunky Italian-style tomato sauce
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon sugar
1/4 teaspoon anise seed
1/4 teaspoon salt
1/8 teaspoon garlic powder
1 loaf French bread
1/4-1/2 cup shredded parmesan cheese
coarsely ground pepper

Steps:

  • In a skillet, cook sausage until no longer pink.
  • Remove and set aside.
  • In the same skillet, cook onion and green pepper until tender, drain.
  • Stir in tomato sauce, tomatoes and seasonings.
  • Add meat to sauce.
  • Cut a wedge out of top of bread about 2 inches wide and 3/4 way through the loaf.
  • Fill loaf with meat sauce.
  • Sprinkle with cheese and ground pepper.
  • Wrap in heavy-duty foil.
  • Bake at 400 degrees for 15 to 30 minutes or until heated through.
