Easy peasy and adjustable. These are good served hot, fresh from the oven, but I make them for us to take to work and eat there. They also freeze and reheat very well. I also used cubed ham if sausage isn't available. And if I have a lot of chopped green or spring onions left over from something, I use those as well as yellow or white onion. Feel free to play with the ingredients. I use 14 large eggs - adjust accordingly. Nuking the sausage ahead of time makes clean up way easier. I end up putting the eggs, baking mix, spinach, salt pepper in the Cuisinart then I just stir in the sausage and cheese.

Steps:
- Spread the sausage out on a microwave-safe bowl and microwave until it's cooked. Drain it and crumble it and set aside.
- Beat the eggs with the baking mix (we use Carbquick) and salt and pepper.
- Drain the spinach and add to the eggs.
- Add the cheese.
- Add the sausage.
- Bake in large rectangular pan that's been well sprayed with non-stick spray (I use a 13x8" pan) You could also bake these (for less time) in sprayed muffin tins.
- Bake 350 degrees for about 40 minutes or until the center is set. Cool and cut into squares.
