Number Of Ingredients 7

6 oz. (1/2 of 12-oz. pkg.) OSCAR MAYER Natural Uncured Beef Sausage
2 tsp. oil
3/4 lb. red potatoes (about 3), cut into 1/2-inch cubes
1/2 cup each chopped onions and red peppers
3 cloves garlic, minced
1 Tbsp. chopped fresh parsley
1/8 tsp. black pepper

Steps:

  • Cut sausage lengthwise in half, then crosswise into thin slices. Cook in large nonstick skillet on medium-high heat 5 min. or until lightly browned, stirring occasionally. Remove from skillet; cover to keep warm.
  • Heat oil in same skillet. Add potatoes; cook 8 min. or until golden brown, stirring occasionally. Add onions, red peppers and garlic; cook 2 min., stirring frequently. Add sausage; mix well. Sprinkle with parsley and black pepper.
