1 T butter
1 T flour
3 extra large eggs
3/4 c sugar
2 1/2 c ground almonds
1 pinch cinnamon
1/2 lemon
1 T confectioners sugar

Steps:

  • Preheat oven to 350 degrees F. Grease sides and bottom of 12 by 20 inch square cake pan with butter. Add flour and tap around to vover. tip out excess. line with parchment paper. Break eggs into bowl and add sugar. Beat eggsa nd sugar for 5 minutes with electric beater, until thick and foamy. Mis the ground almonds with cinnamon. Finely grate in lemon zest then stir until evenly mixed. Add the almonds to the eggs and sugar. Fold in carefully with spatula. Pour mixture into pan. The batter should be aobut 5/8 inch deep. Bake about 17 minutes until evenly risen, golden and shrinking away from sides. Remove and cool in pan. Remove from pan and cut. Sprinkle confex sugar over top with strainer before serving.
