SALMON WITH HORSERADISH CRUST image

1 fillet of salmon
1 cup flour
1 tbsp salt
2 beaten eggs
1/4 cup softened butter
1 tbsp minced shallots
1 tbsp chopped parsley
1 clove garlic, minced
2 tbsp prepared horseradish
1 tsp fresh lemon juice
2 tsp Dijon mustard
salt to taste
1 cup bread crumbs
2 tbsp prepared horseradish
2 tbsp olive oil
1 tsp salt
1 tbsp basil
1 tbsp parsley, chopped

Steps:

  • Sift together flour and seasoned salt in a shallow dish. Whip butter until light and fluffy. Add all other ingredients, cover and hold at room temperature until ready to use. Place bread crumbs, basil, and parsley in a bowl and toss together. Add horseradish and toss. Slowly drizzle in olive oil. Cover and refrigerate until ready to use. Season the salmon with salt and pepper, and dredge in the seasoned flour mix, then dip in the egg mix. Place pieces on a baking sheet and cover both sides with the soft horseradish butter. Coat both sides of salmon with the bread crumb mix. Bake in a preheated 350 oven for 20 minutes or until the internal temp of the fish is 120. Do not turn.
