Salmon With Hoisin and Maple image

From the LCBO Food and Drink Magazine Summer 2012. Sweet and spicy. Oven version provided, but this can also be done wrapped in foil on the barbecue. I usually use a large piece of salmon, but individual fillets or salmon steaks may be substituted and the cooking time adjusted as needed.

3 tablespoons hoisin sauce
3 tablespoons pure maple syrup
1 tablespoon hot Chinese chili sauce
1 teaspoon Dijon mustard
1 teaspoon dark sesame oil
1 green onion, shredded in lengthwise strips (optional)
1 -2 lb salmon fillet, with skin on

Steps:

  • Preheat oven to 425 degrees.
  • In a dish just large enough to hold salmon, whisk hoisin with maple syrup, chili sauce, Dijon and sesame oil.
  • Place salmon in mixture to marinate while oven preheats.
  • Line a baking sheet with foil. Oil the foil. Place salmon on foil, skin side down. Spoon any remaining maple mixture on salmon.
  • Roast until salmon is just cooked and begins to flake, 15-18 minutes. Carefully remove salmon from tray, leaving skin on foil (or keep it on if you like the skin).
  • Sprinkle with shredded green onion if desired. Slice into serving sized pieces.
