Salmon Patties image

My husband loves salmon patties, so I hope these are as good as his mom used to make!

Number Of Ingredients 7

8 ounce(s) pouch salmon
1/2 small onion, grated (1/4 cup)
1 tablespoon(s) fresh parsley, minced
- black pepper, to taste
1 - egg, beaten
1/2 cup(s) panko bread crumbs, divided
2 tablespoon(s) butter

Steps:

  • Put salmon and any liquid from pouch into a medium-size bowl. Flake the salmon with a fork, removing any skin and bones. Mix in grated onion, parsley, and pepper.
  • Add the beaten egg and blend well. Add enough bread crumbs, about 1/4 cup, to make the mixture thick enough to shape into about 6 small patties. Roll the patties in the remaining bread crumbs to coat thoroughly.
  • In a large heavy skillet over low heat, melt 1 tablespoon of butter. When the butter is hot, add the salmon patties. Fry patties slowly on one side until browned. Add the remaining butter, turn the patties, and fry them until browned on the other side.
