SALMON IN PARCHMENT WITH CITRUS BUTTER AND JULIENNE VEGETABLES image

Number Of Ingredients 7

4 T unsalted butter at room temperature
1 T lemon, lime or orange zest
2 T lemon, lime or orange juice
2 tsp chopped fresh herbs (parsley, dill, basil, tarragon, etc.)
Approx 1-2 cups julienned vegetables (red pepper, leek, carrot, zucchini, snow peas, mushrooms)
2 6oz. salmon fillets
salt and pepper

Steps:

  • Combine butter, zest, juice, and herbs in small bowl. Cut out two large heart-shaped pieces of parchment paper. Place the vegetables on one side of each heart, then place a salmon fillet on top. Season with salt and pepper. Top with the flavored butter, then seal the packets by folding the edges of paper together and twisting the ends. Place the packages on a baking sheet, and bake at 400-degrees for approx. 10-minutes, until puffy. Serve at once.
