Salmon Croquettes image

My favorite way to use leftover mashed potatoes. The potatoes really help bind everything together to form a firm patty that won't break apart in the pan.

Number Of Ingredients 10

2 tablespoon(s) minced onion
1/4 cup(s) finely chopped green pepper
1 cup(s) mashed potatoes
1/2 cup(s) cornmeal mix
1 package(s) premium skinless & boneless pink salmon
1 - egg
1 tablespoon(s) spicy brown mustard
1 tablespoon(s) chopped parsley
1 tablespoon(s) butter
1 tablespoon(s) olive oil

Steps:

  • Mix all ingredients together and form into patties. (Add a little additional cornmeal mix or flour if necessary for the best consistency.) Heat olive oil and butter in skillet over medium-high heat. Cook the croquettes until golden brown (2 to 3 minutes each side).
